Quick and Easy Grilling Fish Recipes
By having some grilling fish recipes at hand can be very rewarding, especially if one’s an angler catching and bringing home a lot of fish all the time. You can always have a grill party with your family, friends and fishing buddies with whatever catches of the day. As all fish can be grilled this quick and easy method of cooking is a popular way of dealing with fish fillets, steaks, and small or large whole fish. The recipes for grilling fish of mine are quick and easy to make, and there are great eating too. But before I go on with my grilled fish recipes I like to share with you some general tips for grilling. And they are: Grilling Tips 1. Make sure the grill is clean and well-oiled. 2. With charcoal-grill the heat must be evenly spread before placing fish to grill. 3. For any recipes of grilling fish marinate or season fish at least 30 minutes before starts to grill. If any longer than that covers up and put it in the refrigerator. Turning one or twice so that fish is marinates equally. 4. Before placing fish on grill shake-off excess marinate. 5. For grilled fish recipes choose fish that are firm in texture that will not fall into pieces easily during cooking and cut them into thick fillets or chunks. 6. For whole fish make 2 or 3 slashes on both sides of the body, turning 2-3 times or more during grilling and make sure to oil it frequently. 7. Wrap small whole fish in foil parcels before grilling. 8. Fish for grilling fish recipes is best grilled with medium heat to allow heat to slowly penetrate evenly. Adjust grill rack lower when heat is slow and higher when heat is high. 9. Cooking time varies depending on the type of grill and the distance the fish is to the heat. 10. Always oil the fish with a brush before placing fish on the grill. Below are 3 of my favorite grilling fish recipes. Oriental Grilled Fish Recipe Ingredients: 1kg/2 lbs tilapia fillets—or any whitefish 3 tbsp oyster sauce 2 tbsp vegetable oil 2 tbsp light soya sauce 1 tbsp sesame oil 1 tsp red paprika powder 1 tsp white pepper 3 cloves garlic, finely chopped 3 cm fresh ginger, finely chopped Squeeze of 2 lemon-juice Method: 1. Mix thoroughly all ingredients in a bowl. 2. Place fillets in a shallow dish. Pour the mixture over, cover and leave in refrigerator to marinate for 1 hr or more, turning fillets over once. 3. Preheat the grill. Remove fillets from the marinade and grill for 3-5 minutes on each side, basting frequently with mixture. 4. Serve and enjoy! ________________________________________________________________________ Grilled Spicy Whole Mackerel in Coriander Sauce Ingredients: 6-8 medium size mackerels 4 tbsp fresh coriander leaves, finely chopped 1 tsp coriander seeds, toasted and finely crushed 1 tsp red pepper 1 green or red chili, finely chopped 2 tbsp lime-juice 6 tbsp oil Salt and pepper to taste Method: 1. Make 2-3 deep-cut on either side of fish. Neatly place them on a flat dish. 2. Mix thoroughly all ingredients in a bowl. Pour mixture over, cover and leave it in refrigerator to marinate for about 3 hr, turning every 30 minutes or so. 3. Preheat the grill. Remove mackerels from the marinade and grill until fish flakes with a fork—-roughly about 8 minutes on each side. Baste the fish with the marinade to add favor. 4. Serve and enjoy! ________________________________________________________________________ Grilled Salmon in Ginger Wine Ingredients: 1kg salmon fillet, cut into chunks 2 tbsp vegetable oil 3 tbsp light soya sauce 4 tbsp ginger wine 4 cloves of garlic, finely chopped Lemon-juice of 2 limes Method: 1. Arrange fish on a shallow dish. 2. Mix well the oil, soya sauce, wine, garlic and lime-juice. Pour mixture over fish, cover and leave it in refrigerator to marinate for an hour, turning once. 3. Preheat the grill. Remove fish from the marinade. Grill until fish flakes with fork, bashing the fish with the remaining marinade. 4. Garnish if you like. Serve and enjoy!
