Fried Fish Recipes ~ Deep Fried and Stir Fried

Fried fish recipes are quick and easy to prepare and cook.

Most fishes such as red snapper, grouper, sea bass, salmon, trout, tilapia, barramundi, bream and many more are very versatile for deep-fried or stir-fried methods of cooking.

The stir-fried method is much healthy because less oil is used. White-fish is much preferred with less bone.

Below are 2 of my favorite pan fried fish recipes. You can substitute both these recipes with any kind of fish that suit your taste bud.

Deep-fried Red Snapper

1 whole red snapper about 600-800gm

Some salt and pepper just enough for seasoning

Oil for deep-frying

2-4 cloves garlic, finely chopped

3 tbsp shredded ginger

Some coriander leaves and some spring onions cut into strips

1-2 red pepperoni cut into strips (optional)

1tsp corn flour

Ingredients – Sauce

2 tsp oyster sauce

3 tbsp light soya sauce

1-2 tsp Chinese cooking wine, white wine or light sherry

Pepper and sugar to taste

Directions

Clean the fish and cut 2-3 deep-slits on either side of fish

Rub the salt and pepper all over the fish

Heat oil in a pan until red-hot

Deep-fry the fish until crispy and brown

Place fish on a plate

Reheat pan with a little oil

Add garlic and ginger and fry until fragrant

Add the rest of the ingredients – sauce

Pour in prepared corn flour mixed with water

Bring it to a boil

Pour them over the fish

Garnish with coriander leaves, spring onions and the red pepperoni

Enjoy eating while it’s hot!

Stir-fried Salmon with Asparagus

200-300 gm of salmon fish fillets cut into chunks of an inch

400-500 gm of fresh asparagus sliced diagonally to an inch long

100 gm of carrot cut into slices

2 tbsp cooking oil

2-4 cloves of garlic, finely chopped

1 tsp corn flour prepared with mixture of water

Ingredients – Sauce

11/2 tbsp light soya sauce

Salt, sugar and pepper to taste

Few drops of sesame oil

1 tbsp of Chinese cooking wine, white wine or dry sherry

Directions

Boil some water in a saucepan; add in salt and few drops of cooking oil

Pour in asparagus and boil for about 2 minutes

Drain them

Heat a thin layer of oil in deep frying pan

Add in garlic and fry until fragrant

Add asparagus and carrot stir-fry for 2 minutes

Add in the salmon

Add in the rest of ingredients- sauce

Pour in a cup of hot water

Simmer for 1 minute

Add in prepared corn flour to thicken gravy

Serve immediately!
