Easy-to-Do Fish Fillet Recipes

Here are 2 of my fish fillet recipes which are easy to prepare and cook with little fuss and ingredients.

I believe when the fish is fresh, ingredients for a fish fillet recipe must be kept to the minimum to ensure the fish retains its rich flavor.

Both of these recipes are delicious and nutritious.

#1 Recipe (Steamed)

Ingredients:

500g fish fillets (Snapper, grouper or any other firm white fish)

1 tbsp ginger, shredded

2 stalks spring onions, shredded

1 red chili, shredded

1 tomato, cut into wedges

Salt and pepper to taste

Seasoning:

1 tbsp light soya sauce

1 tsp fish sauce

˝ tsp sugar

1 tbsp oil

1 tsp sesame oil

1 tbsp rice wine or dry sherry

Garnish: Bunch of coriander leaves

Methods

1. Rinse fillets with cold water and pat dry with kitchen tissue. Rub lightly with salt and pepper.

2. Arrange fish on a steamer tray and scatter ginger, spring onions, red chili and tomato on sides and over fish.

3. Mix all seasoning in a bowl and pour all over the fish. Put it in the steamer or wok with enough boiling hot water to steam for 8-12 minutes. The steaming times for these recipes vary with the thickness of the fillets. Steam till it flakes with a fork. Garnish and serve.

#2 Recipe (Pan-fried)

Ingredients:

300g fish fillet, cut to about 150g each

1 tbsp curry powder

Salt and pepper, seasoning

Oil for shallow-frying

Squeeze of lime-juice for garnishing

Methods:

1. Rinse the fillets with cold water and pat dry with kitchen paper.

2. Season the fillets lightly with salt and pepper.

3. Scatter the curry powder evenly on a flat-plate and roll the fillets over it. Leave it to marinate for 30 minutes.

4. In a frying-pan, heat the oil until red-hot. Add the fish fillets, skin down and fry for 2-3 minutes each side, until golden brown.

5. Drain the fillets on kitchen paper, and then placed them on a serving plate.

6. Garnish the fish with squeeze of lime-juice and serve. Enjoy!

These 2 fish fillet recipes are so simple with the preparations and easy on the ingredients. Surprisingly, they taste real great. And the fish species can be easily substituted to your taste-bud or for anglers, the catch of the day. Hope you try these recipes and you will enjoy them.
