Tempting Fish Curry Recipes
Are you looking for fish curry recipes? Well, here are 2 of my favorites curry recipes that I like to share with you. One is Thai curry fish recipe and the other is Malaysian curry fish recipe. Both these aromatic dishes are tasty and delicious using red snapper, grouper, or mackerel. ______________________________________________________________ 1. Thai Fish Curry Recipes Ingredients: 600g fish fillets, cut into cubes 5 lady’s finger, cut into 1-inch 1 large brinjal, cut into wedges 2 stalks lemongrass, crushed 2 stalks curry leaves 4 fresh chillies Few Thai basil leaves 6 tbsp vegetable or olive oil 120 ml coconut milk 15g tamarind paste mixed with enough water for the juice Spice Ingredients: 5-6 shallots 3 garlic cloves 2 tbsp red Thai curry paste Pinch of turmeric powder Pinch of chili powder Seasonings: Sugar to taste Thai fish sauce to taste Squeeze of lemon juice Methods: 1 Heat the oil in a preheated wok over medium heat. Add and fry curry leaves and lemon grass for a minute. 2 Add all spice ingredients with a little water. Slowly stir until fragrant and oil surfaces. Pour in some water and bring it to a boil. Add lady’s fingers, brinjal, chilies and tamarind juice. Reduce the heat and simmer for 2-3 minutes before adding coconut milk and Thai basil leaves. 4 Add all the fish and seasonings to taste. Simmer for 2 minutes. Serve with white rice or bread. 2. Malaysian Fish Curry Recipes Ingredients: 600g fish fillets, cut into cubes 1 large onion, chopped 1 large tomato, cut into wedges 1 large brinjal, cut into thick slices 1 large unripe papaya or mango, cut into slices 4-6 lady’s fingers 4 red chilies 2 stalks coriander leaves, to garnish 2 garlic cloves, chopped 2 sprigs curry leaves 1 tsp fenugreek 3 tbsp curry powder 2 tbsp tamarind paste mixed with a little water to strain for juice 5 tbsp coconut milk 2 tbsp oil Salt and sugar, to taste Methods: 1 Heat the oil in a wok or large skillet over medium heat. Pour in the chopped onion, fenugreek, and garlic and curry leaves, stir them until fragrant. Add the curry powder. 2 Pour in some water and bring it to a boil with high heat. Add tomato, brinjal, lady’s fingers, papaya or mango and red chilies. At the same time pour in the tamarind juice. Reduce the heat and simmer for 3-5 minutes. 3 Add the fish and coconut milk, along with salt and sugar to taste. Simmer for 2-3 minutes. 4 Ready! Disk out and serve. Try these tempting fish curry recipes and I’m sure you will enjoy them. The amount of some of the ingredients can be substituted, reduced or increased as desired. Instead of fish fillets you can also cook with whole fish (small) or in chunks. And you can serve them with bread or rice.
