Hearty Fish Chowder Recipes ~ Filling and Satisfying
My fish chowder recipes are about fresh ingredients, prepared and put together simply into a satisfying and filling one-pot dish. Fish chowders can be easily served as a main course, providing plenty of protein and carbohydrate. The best part of a fish chowder is that it can be prepared days ahead. I find it tastes even better but not over a period of 3 days. And it is just perfect for me, especially when I have a large gathering of family and friends, leaving me plenty of time to enjoy their company. Fish Chowder #1 Ingredients: 1 pound fish fillets, (choose your favorite fish) cut into bite-sized pieces 2 tbsp butter 2 tbsp flour 1 large onion, chopped 3 cloves garlic, chopped 4 sticks celery, chopped 2 sticks leek, chopped 1 medium-sized carrot, chopped 2 potatoes, cubed 4 oz sweet corn 2 cups milk 1 cup water 1 cube chicken stock Salt and pepper, to taste Some fresh parsley, chopped for garnish Methods: 1. In a large saucepan, heat the butter, add the onion, garlic, celery, leek and carrot, cook until vegetables beginning to soften. Add potatoes and sweet corn, stirring all the time for about 3 minutes. 2. Add the milk, water and stock, bring to a boil. Cover and allow simmering over medium low heat for about 15 minutes, until the vegetables are tender. 3. Adjust with salt and pepper to taste. Stir in the flour mixed with a little water. Garnish with chopped parsley and serve. Fish Chowder #2 Ingredients: 450g smoked haddock fillets, cut into bite-sized pieces 4 slices bacon, diced 2 tbsp butter 2 cloves garlic, minced 1 large onion, chopped 2 stalks celery, chopped 2 potatoes, cubed 2 tomatoes, chopped 1 medium-sized carrot, chopped 2 cups fish stock 2 cups milk 2 tbsp white wine Salt and pepper, to taste Garnish with chopped fresh parsley or dill if desired. Methods: 1. In a large pot or saucepan, heat the butter; add in the bacon, garlic, onion, celery, carrot and tomatoes and cook for 2 minutes. 2. Stir in the potatoes, and then add the fish stock, milk and wine, bring to a boil. Cover and reduce to medium low heat and let it simmer, until vegetables are tender. 3. Add the fish, adjust the seasoning with salt and pepper and further simmer for about 5 minutes, until fish flakes easily. Garnish and serve. These fish chowder recipes are rich with lots of vegetables and allow the substitution of your favorite fish. They are exciting dishes made for a chowder party, especially on a cool day. Cheers!
