Mouthwatering Fish Batter Recipes

Fish batter recipes are easy to make requiring only little basic cooking equipment and ingredients. Batter fish recipes are also delicious dishes which suit every occasion.

A great variety of fish such as cod, halibut, flounder, walleye, sole, tilapia, salmon and catfish are good for this method of cooking fish.

Deep-fat frying or shallow frying is the main method used for this type of cooking which requires small or large pieces of fish dip in batter. And to prevent the delicate fish from breaking up when coming into contact with the extreme hot oil the fish must be protected with some sort of coating. Flour, breadcrumbs and eggs are the most used coatings.

The oil for fish batter recipes must be clean and enough to cover the food. Oil must also heat to a sufficient temperature level before food is added in. The ideal temperature is 180C/350F to prevent the food becoming soggy and oily. And when the oil is too hot the outside of the food will over-burn before the inside is cook. The food should be crispy and golden brown when ready.

Here are a couple of my favorite fish batter recipes:

Chinese-Style Fish Batter

Ingredients-A

2 eggs, beaten

Salt and pepper, to taste

½ tsp of crushed garlic

½ cup flour

¼ cup cornstarch

½ cup milk or water (I use water because I’m allergic to milk)

Marinating Sauce-B

Squeeze of lemon juice

1 tbsp honey

2 tbsp ginger wine or sherry

Preparation:

1.Mix ingredients (A) together to make fish batter, and batter should be whisked until smooth without lumps.

2. Mix marinating sauce (B) in a bowl. Pour the mixture over fish to marinate for 15 minutes or more.

3.Dip the fish in batter and fry them in oil, turning once or twice until golden brown. Serve immediately!

Spicy Fish Batter with Pungent Dip

Ingredients:

2 eggs, beaten

1tsp Tabasco sauce

Salt and pepper, to taste

60g breadcrumbs

Dip:

3 tbsp gherkins, finely chopped

5 tbsp plain yogurt

3 tbsp dill, finely chopped

2 tsp wasabi or mustard

150 ml mayonnaise

Preparation:

1.Mix all ingredients of dipping sauce nicely in a bowl and chill it in refrigerator. Mix beaten egg-wash, Tabasco sauce, salt and pepper in another bowl.

2.Fish fillets cut into strips and dip in egg-wash. Then roll in breadcrumbs coating evenly.

3.Deep-fry with oil until crisp and golden brown and serve with dipping sauce.

Beer Batter Fish Recipe

Ingredients:

1 can of beer (12 oz)

2 eggs, beaten

2 cups all-purpose flour

1 cup flour, reserve for rolling

tsp baking powder

½ tsp salt

Preparation:

1.Mix the beer with beaten eggs in a bowl and put it aside.

2.Mix the flour, salt and baking powder in a large bowl. Pour in the combined mixture of the beer and eggs and whisk it until smooth and creamy.

3.Roll the small pieces of fish over the reserved flour and then dip in batter coating evenly.

4.Deep-fry until golden brown and drain well on paper towels and serve.
